Peach and Ginger Cocktail

The fresh summer flavors come from a few different sources.  Of course, we had to include fresh peach, which is chopped and then frozen for a nice frosty drink.  But there’s also a smidge of peach schnapps for extra fruitiness.  Then, the ginger comes in to add a little zing and balance out the sweetness.  We used both grated fresh ginger and a ginger liqueur to hit the right balance.  Add a little rum, a little ice, spin it around, and ta-dahh! Frozen Peach and Ginger Cocktail.

I skinned the peaches before freezing, and I think it helps the texture.  Need some tips on an easy way to skin a peach?  Here’s the secret!  Get a big pot of water boiling, and drop in the peaches for about 10 to 20 seconds.  Scoop them out and drop them into a bowl of ice cold water until they’re cool enough to handle.  Then, using a dish towel or tea towel, hold the peach and twist the skin.  It should shed right off into the towel.

Make sure you blend it long enough to get everything evenly mixed – you want a little peach and a little ginger in each tasty sip.  Between the fruit and the smooth, icy texture, I may have found my go-to summer cocktail. Ingredients

  • 2 peaches, skinned, chopped, and frozen
  • 1 cup ice
  • 2 oz. ginger liqueur (like Domaine de Canton)
  • 1 oz. peach schnapps
  • 4 oz. white rum
  • Generous ¼ teaspoon grated fresh ginger

Instructions

  • Place all ingredients in a blender.
  • Blend on high power until very smooth.

Serve and enjoy!
